Sorbettino: the new ice scream shop in Lisbon

With the arrival of the heat, there is no shortage of ice cream shops in Lisbon

 

Sorbettino ice creams are Chiado´s latest addition and bring scientific rigor to ice cream shops. How? We can explain. This project was opened by the Pedro Simas, a university professor at the Faculty of Medicine of the University of Lisbon. In his new lab, the researcher prepares dozens of different flavours, his specialty being chocolate. The space opened on May 22 and has ten seats.

 

Pedro Simas had the idea of opening an ice cream shop at a dinner with his son. From there, he travelled to Bologna, Italy, to study at the Ice Cream University of Carpagiani, one of the most famous brands of ice-cream making machines in the world. He learned the art of making ice cream with the master Stefano Tarquinio, who will travel to Sorbettino on June 17, to make his ice cream in Lisbon.

The university professor told NiT that he uses “scientific rigor in the research for the best ingredients”. “Some say scientists make good cooks”, he jokes. At Sorbettino there is no shortage of flavours. Only chocolate has more than ten flavours to choose from! There is also cream, coffee cream, espresso, hazelnut, pistachio, almond, peanut, salted caramel, mascarpone, oreo, coconut, strawberry, raspberry, mango, passion fruit, lime, red orange, pineapple, wild berries, kiwi and cherry.

 

“As a scientist, I always look for the best ingredients in the world,” Pedro Simas told NiT. Passion fruit comes from Colombia, mango comes from Brazil and vanilla is from Madagascar. The small coned-shaped wafer costs €1.60, and in a larger cone or cup goes from €2.90 to €5.50. If you want to take home the ice cream in isothermal box, prices range from € 12.90 to € 33.60.

 

Despite having several employees working at Sorbettino with him, Pedro Simas is the only one dedicated to preparing the ice cream. “I've been testing several recipes and I'm solely responsible for the creativity in the kitchen. My goal is to exalt the ingredients, I do not want one to dominate”, he told NiT. However, if there is an ingredient that dominates the house is the chocolate. There are ten different chocolate ice cream based on Sorbettino, all without milk.
